A Few of My Favorite Things


1. I have a new food favorite phase. I usually go through these phases with food where once I've discovered them I have them all the time. So, I've now discovered Spring mix salad greens, with creamy poppyseed dressing, and craisins. It's so delicious. If I had enough money I would add pine nuts, but they are a little too expensive... I guess you could say that this has replaced my food phase of tuna, Yum!

2. With some of my Christmas money I bought myself a recipe box. I've never owned one before so usually I can't ever find the recipes I want or they are on my laptop or they are scattered in a random drawer. I've been looking at recipe boxes for a long time and I finally found one that is not only cheap but beautifully simple. The amazing thing about my new recipe box is that I love looking through it and cooking from it so it has helped me enjoy cooking more. I've also been skowering over recipes to find ones worthy of adding to my box. I love having all my recipes in one place and it's given me a project to work on in my spare time.

3. I also love my new pajamas I got for Christmas. I actually have two new Christmas pajamas, but I were them both equally. Everyday I get home I immediately change into my pajamas. I hate wearing normal clothes sometimes. Especially since I were scrubs all day which are so loose and comfortable, it's hard to go back to normal clothes.

4. I love our new car. We have a 2005 heather grey/green/black trailblazer and it is so fun to drive. Drew and I switch off and on who gets to drive it. I still like the HHR don't get me wrong, it's nice too.

5. I love seeing Drew (as always), but now that he has started school and work I see him even less which makes the times that I do get to see him so much sweeter.

Some goals

I don't know if you can really call these New Year's resolutions, but I've decided a few things in the past week/month.

First, I have been thinking for the last two years that I would like to run a marathon. It is probably number one on my ultimate life goals list because it is such an intense process of training and dedication. Completing a marathon is something I would really like to say I've accomplished and I believe that it would help me get into a better habit of health. The only problem is that there aren't a lot of great races in Nevada and if there are any they are usually on a Sunday :( . I've been so accustomed to Utah where there are so many good races like the St. George Marathon, Top of Utah ( in Logan) and the Salt Lake Marathon. I really wish I had taken advantage of those opportunities when I was living there. I've heard that the Top of Utah Marathon in Logan is the best marathon for first timers since a lot of the track is down hill. That would be nice. So... I've been thinking about this for a really long time, but I think this is the year when I am going to make this happen :)

Second, just this week I've decided that I want to really work on getting more fiber in my diet this year. You may be thinking, fiber? Of all the things to make a goal about... fiber? Well, this is a non-generic goal I can make that is associated with many health benefits. Increasing fiber is a great way to increase your health. Fiber rich food include vegetables, fruits, whole-grain products, and legumes. So why is fiber so good for you?

- For one thing, fiber is extremely hard to separate from the contributions of other nutrients. Most foods with significant amounts of fiber like legumes, whole-wheat bread, strawberries, and brocolli are packed with essential nutrients and carbohydrates. These foods are packed with antioxidants which help fight free radicals and vitamins and minerals. Foods with fiber often have less fat too.

- Another thing that you might associate fiber is regularity. Fiber holds on to water, helping to soften and add bulk to waste in the intestines which is a really good thing! It helps stools pass through the intestinal tract more quickly with normal frequency and ease. I know I might be losing some of you here on the interest factor, but think of this... the slower waste moves through your intestinal tract the more time it has for potentially harmful substance to come in contact with the intestinal wall. Bulkier stools (with the aid of fiber) help dilute the concentration of potential carcinogens and help keep the pH at a level that reduce intestinal microbes to produce carcinogens. That is why fiber is so closely linked/associated with the prevention of some cancers especially colon cancer.

- Fiber rich food help keep you body trim too! Just think about it often they are lower in calories, fat, added sugars, and they're less energy dense. With their added bulk they help you fill fuller sooner, so you eat less. Fiber itself isn't fattening or provides any calories because it isn't digested!

- For people with Diabetes fiber helps to control the rise of blood sugar level after eating. For some, fiber may help reduce the need for insulin, or medication. It is wise for some to help manage diabetes with soluble fiber such as legumes (dry beans) and oats in combination with an overall healthfun eating plan. Wow... imagine that, a healthy diet can help us manage chronic diseases! Who would've thought? Did you know that the leading cause of death which is Heart disease in America is ironically nutrition related? Think RAW foods.

- Which brings me to my next point... some soluble fibers may help lower the level of total blood cholesterol, mainly lowering LDL cholesterol, or "bad" cholesterol. Fiber acts as a sponge, binding cholesterol rich bile acids so they aren't reabsorbed and passed as waste. * you need to eat a lot of fiber for heart healthy benefis about 3 g per day (i.e. 1 1/2 c cooked oatmeal)

With all these benefits how much do we need? The average American (with all of our refined grains, while bread, blah blah blah and eating so many refined foods in general..) we only consume about 14 grams per day. The recommended amount is 38 grams for men up to age 50 and 25 grams daily for women. After age 50 the recommended amount is less. However more than 50-60 grams of fiber a day is too much! Moderation in all things right? Although for most of us this isn't a problem. If you are following the MyPyramid food guidelines you can get all that you need. This means we can all strive to get more fiber and when you're trying to increase fiber you will inadventantly increase your intake of fruits, vegetables, and whole-grains!

Whew... sorry about that. Sometimes I really get on a nutrition kick, but mostly because I would like to learn more on a certain subject. There is so much information I should really start a separate blog for this kind of thing so thanks for bearing with me this one time. Really I feel like I bore everyone with this information, but like I said I just get on these kicks. Playing Catch Up

I haven't posted much of anything lately and I know I never posted about Christmas, but it was so fun. Christmas this year was one of the biggest Christmas's we've ever had with some very memorable gifts. For one, my mom made Drew and I a beautiful quilt that we will add to our collection! I really love every part of this quilt. I know I am picky and particular especially about the backs of quilts and I esp like the back of this quilt because it's yellow/gold. Thank you mom! We also got marble cups from Italy made from the marble mountain Carrara (did I get that right Vanessa?) It was very special to get a gift from a part of Italy. We really want to go to over to Italy! And like always Drew's mom and grandma, Julie & Marje, showered us with some wonderful gifts... slippers, pajamas, amazing silicon baking mats, lotion, and clothes! Drew got more fishing gear this year from me and Drew got me a new digital camera which I love! Another big thing that we got this Christmas was a second car which Bob & Julie helped us get with a loan! We really have been able to share a car thus far and it's been fun, but we are so happy to get a second car now! I was so touched by everyone's generosity, but the best thing was spending time with family. We played chimes and also participated in Bob's Root Beer test tasting extravaganza! Of course we're snobs now... here are some pictures for you to enjoy!

Happy New Years!


I hope everyone had a wonderful and safe New Year's! Last night Drew and I were discussing our 2008 in review. Often it is at the end that you tend to look back. What was your best moment of 2008? Here is what we came up with for our best moments of 2008...

Drew: Thanksgiving, Christmas, Flaming Gorge fishing trip, Frost Family Reunion in Ouray, CO, and seeing all of Texas!

Me: Graduating from BYU (the whole week of graduation was awesome and I couldn't stop smiling!), Drew's birthday, Frost Family Reunion in Ouray, CO, Thanksgiving & Christmas!

We then started talking about what we're most looking forward to in the 2009 and we both agreed that we are most looking forward to summer. I want most to go on a lot of trips and pack everyday possible with something exciting and fun. I want to go somewhere like Hawaii, or Italy, or Havasupai this summer. And Drew would like to go to Flaming Gorge again or to the Boulder Mountains. I want to work on a life goal of mine to run a marathon this year and we both want to be very very active this year. Just laying in bed last night talking about all the things we wanted to accomplish and do this year made me so excited to get a head start on 2009! I am really looking forward to the future and more now than I ever have before. 2008 was filled with so many changes for Drew and I (we moved from Utah to Nevada, I graduated from college, Drew started Graduate School, we lived in Texas for two months as auditors for the USDA, we moved to Reno, I got a full time job, and we're adjusting to living as Nevadans). It went by somewhat fast, but also very slow. We were both ready for 2008 to be over. Happy 2009 everyone!
